ПРИГОТОВЛЕНИЕ РАССОЛА

При необходимости передержки или хранения рассольного типа сыров, в частности в домашних условиях, их следует выдерживать в растворе поваренной соли. Качество приготовления рассола должно соответствовать степени просоленности сыра, влажности, твердости, его консистенции и температурным условиям. Требуемый объем рассола зависит от количества сыра, плотности укладки и конфигурации предназначенной тары.

Рассол приготовляют с расчетом покрытия поверхности сыра. Высокая кислотность рассола, а также концентрация соли и температура способствуют обезвоживанию и отвердеванию сыра, и наоборот, низкие их показатели — оводнению и набуханию. Рассол приготовляют на воде, сыворотке или их смеси. Соль берут мелкокристаллическую или в глыбах (каменную) — высокого качества. Водный рассол используют подкисленным кислой сывороткой, молочной, лимонной или даже соляной кислотами. При наличии нежесткой родниковой воды рассол можно готовить без ее кипячения. Уход за сыром заключается в повседневном наблюдении за поверхностью рассола. Систематически убирают образующийся налет, пленку, при этом время от времени проверяют и состояние сыра. Ослизнение поверхности его указывает на недостаточную крепость или кислотность рассола. Слишком грубая консистенция сыра свидетельствует о повышенной крепости или кислотности рассола. В зависимости от того или иного состояния сыра следует повышать или понижать крепость, кислотность рассола или того и другого вместе. При неблагоприятных условиях хранения сыры приобретают тухлый запах и неприятный привкус. Поэтому необходимо недоброкачественные рассолы менять. Перед сменой рассола сыр следует промыть и проветрить. При необходимости такая операция проводится несколько раз.
